Caramelized Onions and Black Beans Quesidellas – shout out to Sonal – Simply Vegetarian777

I say this, because Sonal regularly posts mouth watering vegetarian dishes that even for a meat eater like me gets me salivating and the other day, this one caught my eye:- Caramelized Onions and Black Beans Quesidellas

I am a bean fan and have also fallen in love with Mexican food especially so after discovering Burritos, though these are not those, they got me itching to make it.

I can tell you now, it is pretty easy to make and tastes amazing.  I loved the idea of frying the tortillas I would never have thought of that and these certainly weren’t considered a snack in our house they were really filling.  My children could not get enough of them, it got a 9/10 rating from them and is on the list to be cooked again.

The amounts are meant to be to serve 2 however they catered for a family of four, I am not sure how many Quesidellas Sonal eats!!

Caramelized Onions and Black Beans Quesidella

Kitchen Equipments Required : 2 heavy bottom pans, chopping board, knife, flat spatula, stirring spoon.


  • Oil 2 tsp
  • Garlic 2 tsp, chopped
  • Onion 1 small, chopped thick
  • Bell peppers 1/2 cup chopped
  • Black beans 1/4 cup. You may use Red Kidney beans instead.
  • Cilantro/Coriander leaves 1 tbsp, chopped
  • Cumin powder 1 tsp
  • Oregano powder 1/2 tsp
  • Paprika 1/4 tsp
  • Salt for seasoning
  • Cheese, shredded  1/2 cup.   Sonal suggests one can use a Mexican blend or Queso along with mozarella.
  • Tortillas 6, medium size
  • Lime juice 1 tsp
  • Oil a little to grill the Quesidellas


For the filling – As suggested I heated the oil in the pan, then added the chopped garlic, bell peppers and onions, these were sauted for 2 mins on a medium heat.  Then add the black beans, which I rinsed first, along with the cumin, oregano, paprika and salt to taste.  Cook for 2 more mins then switch off the flame.  Add cilantro (coriander) leaves and lemon juice, toss around, set aside.

To make the Quesidellas – As suggested I heated and greased up a heavy bottomed pan after having got the filling ready by dividing up in to 3 portions.  I then put the tortilla in the hot pan, spread a layer of beans on the tortilla, cheese on top then quickly covered with another tortilla.  You might want to make sure have a ‘large’ spatula at this point as I pressed the top down a bit, helping it to seal then quickly flipped it over, semi closing my eyes and hoping for the best.  Tadahh it was alright, they are then ready once cut up!

I served this with sour cream and salad.  Sonal suggested as well a this guacamole and some Tabasco if feeling brave!

      oh it was Cardinal, really lovely. You should pop by Sonals blog she makes amaizing things but you should definitely try this out. I just spent three hours baking a cake today and nearly fainted the recipe was so good or was it that i was so exhausted lol xxx

      you know it is not overwhelming the taste at all of them, there are so many other flavours with it, i got the texture more than anything, but then i love black beans so i am not the best person to try and down the taste haha xx

        LOL. My family and I sometimes spend a day at their place (or more often mine) to do some work – gardening, painting, cleaning, fixing things – and we will order Chinese food rather than cook that night. My dad will eat most things, but he and my brother love black beans, my mum won’t eat chicken or fish and she’s allergic to mushrooms, and I won’t eat black beans! Makes it interesting to order, since we insist on sharing everything! But Beef with Black Beans is ordered every time because it’s Darren’s favourite.

          haha i bet actually we had chinese last night, love it but i am allergic to msg, this particular take out though doesn’t seem to use much if at all of it which is great, otherwise i end up feeling nastily drunk and sway around x

    I never fry tortillas. In fact, it never crosses my mind frying them. I ought to try this one. Sometimes if I want something meaty, I use quorn for substitute. Or tofu. Appetizing photos by the way.

      I’ve not really tried quorn or tofu much but perhaps I should, one of them is quite salty isnt it? I had never thought of frying either but wow makes for a great treat, my kids are waiting for another hehe x

        No, neither is salty if you buy them natural. They are quite bland in fact because the idea is they absorb the taste of whatever you are cooking them with, like vegetables.
