There was a special little something that caught my eye the other week that the lovely Nancy had made who writes the blog Feasting With Friends.  That was Peanut butter cupcakes {with vanilla buttercream & peanut brittle} – you can find here recipe here:- Nancy’s Peanut butter cupcakes

I dithered and dallied long enough that I could wait no longer to try it and that just happened to coincide with Valentines.  I didn’t have quite all the ingredients, so had to do some doctoring on the recipe, plus wanted to dress it up in Valentines theme for all you lovely bloggers so that I could wish you an official Happy Valentines!

What do they taste like I hear you ask?

Absolutely delicious.  I didn’t put the peanut brittle on, as I replaced this with champagne chocolate hearts.  I also didn’t have as much cream as in Nancys recipe, but have made up buttercream icing many a time with just icing sugar, butter and vanilla essence, just mixing the quantities until you get it to the consistency you feel you can decorate with (which is  not my strong point, decorating that is).

The fairycake bit is heavier than a traditional fairycake, the peanut is not overwhelming as one might think it to be sickly sweet but it isn’t.

I used rock salt in my buttercream icing with a dash of the double cream I had left, the salt brought out the peanut taste beautifully which was complimented by the buttercream.

 How do you make it?

Ingredients for the fairycake

1 cup all purpose flour
1 cup granulated sugar
1/2 teaspoon baking powder
1/4 cup milk
1 egg
1 teaspoon vanilla extract
1/2 cup water
1/2 cup unsalted butter
3 ounces (1/4 cup plus 2 Tablespoons) peanut butter


Set the oven to 170 C.  Get your cupcake liners ready in the tin, 12 of them.

Whisk the flour, sugar and baking soda together.

Add the vanilla, milk and egg, beating slowly until smooth.

This bit I think is a definite Nancy special, she says:

In a small saucepan, over medium heat, combine the water, butter and peanut butter. Heat just until everything is melted, combined and smooth. Remove from heat and stir into the flour mixture on low speed. Mix just until it comes together.

Then pour the mixture in to the paper liners, bake in the oven for 15-20 minutes or until lightly browned and come out clean when a toothpick inserted.

Cool before decorating.

Vanilla Buttercream Frosting


1 cup unsalted butter softened

3-4 cups icing sugar

1/4 tsp salt (I use rock salt)

2 tsp vanilla extract

dash of water


Mix the butter until light and creamy, slowly add in the icing sugar until incorporated, then the vanilla extract.  Beat until you find the consistency you need to work with, if necessary add a touch of water.  If too runny add more icing sugar.  I added a dash of double cream, only because I had a touch left, Nancy’s recipe uses much more and I am sure tastes delicious.  Please pop by to her recipe to find the more luxurious version.

I also did not add the peanut brittle as I topped with chocolate hearts, however if you wish to find out how to do this, which I will do next time, again pop by to Nancys.

        Missed you too. I’ve been blogging much less this week or very late. Time was running fast and my agenda was a bit funky. The girls have been busy tweeting and partying though. Envy!!!

          haha yes they have, i would have envied but i cant handle drink it appears unless i just have not discovered the liqour that i can handle hehe. I think wine is out of the quetion though, so i might try the fizzy stuff, good excuse to drink it right? 😀
