Easiest Banana Bread

Banana bread is the one thing I have made tonnes and tonnes of time with varying degrees of success and the one thing I feel confident enough to experiment in.

However, for me, it usually comes about because the bananas have gone dark and usually I am in a hurry, so how about the easiest and fastest banana bread recipe, that would come in handy right?

This tasted yummy scrummy in my tummy!

Easiest Banana Bread

Serves: 8 

  • 4 very ripe bananas
  • 85g melted butter
  • 200g sugar – I used dark sugar, it added just an extra bit of depth to the taste.
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon bicarbonate of soda
  • pinch of salt
  • 190g plain flour
  • A big squidge of honey
  • handful of raisins

Method
Prep:20min  ›  Cook:1hr  ›  Ready in:1hr20min 

  1. Pre heat oven to 180 C / Gas 4.
  2. Placed mashed bananas into medium bowl. With a spoon, mix in all ingredients one at a time adding flour last.
  3. Grease and line your loaf tin, pour in mixture and bake for approximately 1 hour or until cooked.

I was a bit naughty and topped this banana bread with a squeezy of Carnations Condensed Milk ooooh la la, was tres delicious!

    Banana bread/muffin is one of the baked goodies I have also made multiple of times. This looks so good and that drizzle of condensed milk – wow! I have never tried that before, it must be so good. Happy FF, Justine. 🙂

      oh condensed milk in a tube is dangerous as it is so easy to squirt over everything lol x

    I’ve save this recipe and am certainly going to give it a try. Do you spread anything on your banana bread or just eat it as it is?

      well i squeeze the condensed milk but to be honest it didn’t hang around long enough, it was so moist it was really rather quite addictive. the dark brown sugar makes such a difference x

    It looks amazing, at first I thought it was a chocolate banana bread because of the dark brown color. Is that from the dark brown sugar? I’m all for drizzling and fancying it up with condensed milk… I could eat it like dessert on its own 🙂

      yes I used very dark brown sugar and it made it so moist and it just had the extra depth of taste to it 🙂 I hope you make it yourself, please let me know if you do x

    For, as you call it, “an easy recipe” it sure looks fabulous! Love that drizzle of sweetness on top (I’ve never seen that here in the States). I’m sure I could gobble up a loaf of this with no problem! Yummy. 😛

    This looks like cake! I love either. I’ve never heard of squeeze condensed milk. That would be dangerous for me to have on hand because I can eat the stuff out of the can. 🙂

    I would tell you I am going to make this but that would be a lie. Not because it doesn’t look delicious but because I always intend to make banana bread with my browning bananas, yet, never do. Tom continues to tell me to throw them out but I resist; I intend to make banana bread. I end up throwing them out in the end. Please don’t judge me for this; my intentions are good.
