Wheat & Gluten Free Chocolate Fudge Brownies Low FODMAP

These were a great find and so easy to make.  I had the usual suspicion that being gluten free it might not taste good and though when I took them out I thought “Uh oh these look rather dry”, I was in fact wrong.  They were light, yet beautiful soft and squidgy in the inside.  Yum yum and went down as a total treat in the house and didn’t last more than a few minutes, it was chaos! 😀

Wheat & Gluten Free Chocolate Fudge Brownies Low FODMAP

Ingredients

100 g Butter
150 g Dark Chocolate
100 g Gluten Free Plain Flour
100 g Chopped Hazelnuts OR Walnuts (optional)
200 g Sugar
3 Eggs
1 tsp Baking Powder

Method

  1. Gently melt together the butter and chocolate.
  2. In a separate bowl mix together the flour, baking powder and sugar.
  3. Beat in the eggs followed by the melted butter and chocolate mixture.
  4. Stir in the nuts if used.
  5. Pour into 200 x 250mm/8″x10″ oiled and lined baking dish.
  6. Bake in a pre-heated oven for 22/25 minutes.
  7. Cut into slices before serving.

Temperature & cooking time:
180°C/Fan160°C/350°F/Gas 4 for 22/25 minutes

Dietary status:
Without Gluten, Without Soya, Without Wheat.

    OMG Justine, these look like the perfect brownies! I love a crunchy top and squishy middle! Just how they should be! Hannah @ Domestic Gothess brought some amazing salted caramel ice cream to the party, and said it just needed an epic brownie to go with, and I was hoping someone would come up with a recipe (never found one I’m happy with yet, but this looks like a winner!) because I’ve vowed to make the ice cream (and now the brownies!) on Bank Holiday Monday when we have some friends coming over for a roast! Oh my diet!! 🙂

        I tried these yesterday, and oh wow! Delicious! However, I should have upped the cooking time by maybe ten mins I think, they were more of a goo than a brownie, but oh so yummy! 🙂 I also might have added some white chocolate buttons, just because it wasn’t indulgent enough already, lol! Thanks Justine! This recipe is def a keeper!
