Succulent Sweet, Lemon Chicken

This is such a super easy chicken meal, I’ve cooked it a few times now and it got the thumbs up from my mother in law, so it must be good ๐Ÿ˜€ ย It also hits the button with the Low FodMAP eaters.

Succulent Sweet, Lemon Chicken

Ingredients

  • 3 juicy lemons
  • 50g butter
  • 3 tbsp clear honey
  • leaves from 4 rosemary sprigs
  • 1 garlic clove, finely chopped
  • 8 chicken pieces, such as thighs and drumsticks, with skin
  • 750g potatoes, peeled and cut into smallish chunks
  • green salad, to serve

Method

    1. Preheat the oven to 200C/Gas 6/fan180C. Squeeze the juice from 2 lemons into a small pan and heat with the butter, honey, rosemary, garlic and salt and pepper, until the butter melts and it smells fragrant.
    2. Lay the chicken in a roasting tin โ€“ donโ€™t pile it up or it wonโ€™t cook so well. Add the potatoes and drizzle with lemon butter to coat evenly. Cut the third lemon into 8 wedges and tuck them in. (Can be made up to 2 hours ahead up to this point.)
    3. Roast for 50 minutes – 1 hour until the chicken is cooked and the potatoes are crisp and golden. Serve with a green salad.

        Oh, so you heard about the vegetarians invading the restaurant and yelling at people for eating chicken: “It had a personality! How can you eat it?” Well, some do wear little coats and aprons at free range farms – to protect from hawks and bullying chickens ( and yes, chickens will single one out and attack it constantly. Talk about mean girls!)

    I have everything that I need to make this dish, and it looks delicious! I love one dish meals. Not only are they convenient, they blend the flavors together in such a yummy way.

    I love the vibrant colors and flavors in this easy to create meal. It looks like one of those meals, where no one would know that it only took one dish to make! Happy FF, and have a fabulous weekend!

      yes one pot meals are fab and casseroles, slow cookers, anything to make cookign easier but still tasty ๐Ÿ˜€ x

    Lemon, rosemary and chicken is a combination made in heaven! Adding the potatoes is a good idea as well. Very yummy, thanks for sharing with the gang at FF.
