Cilantro, Orange, Sriracha Chicken

This was apparently an experimental dish that Anjana posted the other week, it caught my eye and I had most of the ingredients.  It was a dream to cook and wowee it tasted wonderful, even with the few alterations I had to make due to not quite having everything.  Loved it ❤  I got a 8.5 – 9.5 out of 10 score from everyone 😀

WHAT YOU WILL NEED: (as taken from Happy & Harried)
For the chicken,
  • Cilantro – ¼ cup, chopped
  • Ginger – 2 tbsp, finely chopped
  • Garlic – 2 tbsp, finely chopped
  • Orange juice – from 2 medium oranges
  • Sriracha sauce – 1-2 tbsp (as per heat desired)
  • Salt – to taste
  • Chicken drumsticks – 6
  • Oil – to brush on top
For the cilantro yogurt,
  • Cilantro – ½ cup, roughly torn
  • Yogurt – 2 cups
  • Salt – ½ tsp
For the turmeric rice,
  • Oil – 1 tbsp
  • Cumin seeds – ½ tsp
  • Turmeric powder – ½ tsp
  • Green peas – ¼ cup (fresh or frozen)
  • Cooked rice – 3 cups
  • Salt – ¾ tsp (or to taste)

You will need to pop over to Happy & Harried to get the method.  However, just to add a few changes I made, mainly because it was a spontaneous dish and I didn’t quite have everything.  I didn’t have Sriracha sauce, I had Bajaan Hot Pepper Sauce but it was disgustingly old tucked away at the back of the cupboard, so instead I added a few red chillies.  I have to say I also added some orange segments at the side of each dish and trialled by squeezing some over my completed dish and wow it really does make a huge difference, the combination is truly lovely, so thank you to Anjana for this lovely recipe x

      sounds like you were due to have a great time, and the bowls are coconut shells decorated inside, love them. No leaving them in water or putting int he oven though, x

      Oh I didn’t get to make the sauce lacking ingredients of sauce bottles, but mind you it was great without and the hotness might have scared me lol x

        I feel the same way! I always modify other recipes to meet the needs of my food allergies, so I guess I’m a good substituter (rather than recipe maker). 🙂

            I have celiac disease (which is an autoimmune disease not an allergy) and then seven other food allergies. Most aren’t helpful for other people because they’re random things like rosemary, but the common ones are dairy and egg.
