Chicken in Orange Sauce with Green Beans in Tomato Sauce, Bajan Style

Now that Spring is here and dare I say a little bit of sunshine comes peeking our way, I start to long for Barbados and hopefully this year we will actually get to go back after many, many years absence due to my health issues, but things are changing, be it a long slog but the tickets are booked and I am crossing fingers and toes that my uphill recoup continues.

With this in mind my Bajan longing has crept in to my cooking.  This is a super easy dish, healthy, only a little bit of brown sugar, the rest caters for your protein count, veg & fruit. I like to serve this dish with rice.  You could team it with a glass of rum if your’e really going for it.

Super fresh and tasty, that is how I describe this meal.

Chicken in Orange Sauce

Ingredients

  • 6 chicken pieces
  • 3 tbsp flour
  • salt and pepper
  • oil for frying
  • 2 cups (1pt) orange juice
  • 2 tbsp white vinegar
  • 2 tbsp brown sugar
  • 1 tsp grated nutmeg
  • 2 cloves garlic crushed
  • 2 oranges segmented

How To Make

Coat thoroughly the chicken pieces with the seasoned flour.  Fry on all sides until a lovely golden brown then transfer to a casserole dish.  Add the orange juice, vinegar, sugar, nutmet and garlic.  Simmer, covered for about 45 mins until beautifully tender then garnish with the orange segments and cook for a further 5 mins.

Green Beans in Tomato Sauce

Ingredients

  • Young green beans for 4
  • 1 tbsp cooking oil
  • 1 medium chopped onion
  • 1 garlic clove crushed
  • 14 1/2 oz tin tomatoes
  • salt and pepper

How To Make

Top & tail the beans, my kids hate the pointy bits.  Cook them in salted water until just tender, about 15-20 mins.  Then heat the oil, add the onion, garlic and finely chopped tomatoes, simmer uncovered until it becomes a thick reduced sauce.  Add salt and pepper to taste.  Beans are ready then to serve with the sauce on top, easy peasy.  Gives you the vegetable count for the day.

    How wonderful that you are feeling well enough to travel to the Carribbean. Now that will be fun and relaxing. Both dishes sound delicious, looks so good!!

      I am very excited and very nervous at the same time, have missed it so much and thought i would never get back. It’s a long journey for me, but I am travelling in style this time, hence wide reclining chairs so I can lie back, otherwise sitting I wouldn’t stand a chance, bust the bank account but there you go lol. I just love Carribbean food its totally my favourite, Thai coming a close second 🙂 big hugs and woofs to you x

    It is interesting how connected travel is with food. This lovely dish does make me think of warm waters and blue skies. I’m glad to hear that things are uphill for you.
