Dairy & Gluten Free Matcha, Chia Seed Pancakes

Now I am pretty sure I know what you are thinking when you look at the photos.  Something like ‘Oh that’s a pancake that Shrek would eat’ or Omg it’s green!!!’

Don’t let the colour put you off, just think healthy and tasty because it really is.

Matcha as detailed below packs a punch in keeping you going for the day and chia is packed full of nutrients.  This recipe is also GLUTEN FREE and DAIRY FREE.

I kept my batch of wicked green stuff in the fridge, so easy to fry up a small pancake in the morning and it feels like a real treat.

Pancake Ingredient

  • 1 large free-range egg
  • 1 cup of gluten free self-raising flour
  • 1 cup of coconut milk
  • 1 teaspoon matcha
  • 1 tablespoon chia seeds
  • sea salt
  • coconut oil for cooking

 Optional Toppings – only limited by your imagination

I did one with:-

  • coconut yoghurt
  • grilled bacon
  • rice syrup
  • strawberries
  • pistachio nuts

I did another with:-

  • rocket
  • grilled bacon
  • pistachios
  • rice syrup
  • blueberries
  • strawberries
  • drizzle of almond butter

I’ve also had plenty of ‘just fruit’ varieties.

Method

Crack the egg in to a large mixing bowl, then add the flour, milk, matcha and chia seeds and pinch of sea salt if desired.

Whisk together until smooth.  Leave in the fridge for the chia seeds to swell for four hours, otherwise they take in water internally which we don’t want.

If you wish to add fruit in to your actual pancake rather than on top fold them in at this stage, personally with matcha pancakes I like to add on top.

Put a pancake size frying pan on to a medium heat and after a minute add the tablespoon of coconut oil, or more depending on the size of the pancake and pan.

Carefully tilt the pan to spread out the oil.

Then swirl in the pancake mix, I use small pans so this tends to make at least four batches for me.

Leave the pancake to sizzle for a few minutes, the edges go in slightly and get a golden colour, you can always use a spatula to see if cooked underneath.

Then quickly flip over, flatten down a little and voila in a couple of minutes your matcha pancake full of goodness is done.

Now it is ready for dressing as you like!

To top things off, chia seeds are a “whole grain” food, are usually grown organically, are non-GMO and naturally free of gluten. Bottom Line: Despite their tiny size, chia seeds are among the most nutritious foods on the planet. They are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients.

Archie my official taste tester opted to me more of a “I wiill just look this time mummy” as I started off, however when the bacon came out there was a ‘woof’ and a ‘snort’ in appreciation!

    I have green tea all the time but have never had powdered matcha, except maybe green tea ice cream I think. The pancakes are super healthful, sound delicious and I love that they are nutritious and taste good. Shrek would be proud.

    I love this recipe and think I can turn it into wraps and things too! we all have ‘an image’ in mind for Pancakes…. Green.. isn’t the first mental picture LOL but, with all the Benefits of chia, coconut, matcha I’m in!
